Any suggestions of what to do with this tree regarding growing shaping etc...

I have one similar to this myself, thou this one I think has a thicker trunk.

Let the shoots extend and become branches. Wire to bring them down or if you prefer (with natives) heading up at 45 Deg.
once they extend a few inches, then trim them back to develop ramification.

A broom style outline is the overall outline I am trying to get from mine.

post pictures of yours if you can. I am quite happy with this one as it was really hard to get it out of the ground because its thick trunk and roots but eventually squeezed it in a pot and it survived. I carded away some of the trunk and roots to give it a bit of character and i just keep trimming the new growth to make it branch out a bit. Recently removed the leaves to expose some branch and wired it for a few weeks to get a little shape.

the last 2 photos I have.
I broke a branch off 18 months ago and last year had to wire a branch up as the new apex
