So many to choose from...
Accents are usually chosen to compliment a bonsai display or enhance the story you are trying to tell. Sometimes they suggest a season - Flowering plants indicate Spring, grasses could suggest summer. Ferns might be displayed with a bonsai that grows naturally by rivers. Maybe you should decide what bonsai you want to display with and what feel you want to convey/ enhance.
Some popular accent species: mondo grass, dwarf bamboos, aquilegia, ferns, grasses, skullcap. Almost any small growing plant can be/has been used.
It is not easy to keep plants alive and healthy in smaller containers. Some species are hardier and easier to maintain.

You can even pull up local weeds and use them as accents if you're showing local trees.

Accents are also used to show contrast, leafy accents for conifers and grasses to compliment leafy trees. Never place a flowering accent with a flowering tree and try to have variation in pot shapes and glazes.
