Anyone know where I can buy a privet in Melbourne that's suitable for bonsai?

Find a weedy garden?
Some nurseries do sell them, mostly as small plants, even though they are known as weedy garden escapees. Probably not quite so suitable for immediate bonsai styling though.
Maybe make contact with some of the landcare groups in and around Melb to see if they are working on areas that have feral privets that need to be removed.
I have collected some from a landcare weed management project up here. Mostly shohin sized trunks that will be available for sale soon. Let me know if you're interested.
