Large Bonsai

I had this Wollemi since they were made commercially available about 12 - 14 (I can't actually remember) and within the last 6 - 12 months, the plant has grown a lot of new branches and secondary trunks.
The tree currently stands about 2m tall ( not including the pot) and I'm looking for some advice to start training this a s a larger sized bonsai, beginning with chopping the trunk and picking a new leader.
Any thoughts would be greatly appreciated!
