Too much iron in my espresso??

Hi there crazy kids!!
I have been experimneting with some coffee trees. (Coffeia Arabica). One has been aloowed to grow freely but the other has been kept very small (About 3 inches high) I had a go at defoliation a few times and the leaves are about 1 third of the size of the other plant. I thought to myself wow!!! Not bad reduction aye Johnny? I also realised however that the leaves have all the hallmarks of an iron deficiency. The main veins are still dark green but he remainder of the leaf is a very light limy cream colour. The soil is no different to any of the other trees I have so assuming I DO have an iron deficiency, could my attempts to stunt it's growth be enough to cause this? I'm actually going to check if the soil is too alkaline. This may be the problem.
