I've stump cut these a while ago and the have started growing and now I'm guessing I need to pick a new leader and remove the rest, is that right???
Which one would be suitable, really new to this..

Which one to chose greatly depends on what you have in mind for the tree. With the photos you have provided it is nearly impossible for me to make a call on what to keep and what should go.
The flow of the trunk could give you some clues, but you need to consider the nebari as well.
One shot may form the new leader, other may be your first branches.
Some more photos may be helpful if you want some ideas from the crew.

I've taken some photos of all sides and the curve of the trunk.
Think I got all the sides.
The nebari is pretty covered up at the moment, but is a large block of root in a round ish shape. I have 5 others as well, but I like the movement in this trunk....
The curve of the trunk can be seen in these photos below as well as the bottle to show scale...
I'm guessing the leader i select will be wired into the new shape with all other removed...

NO not hurry as Callis can be wired and and bent when the branches have lignified.
For me tho, I might lean it away from the bend ( to the right in the upper pics) to lay the lower trunk at more of an acute angle and then the larger shoot will be on the upper side and become the next section of trunk.
I agree with Ken. You are in far too much of a hurry here. Let all the shoots grow this season. Your tree needs to get new roots growing and at least think it is safe for a while. Plenty of time to select the new leader and start pruning next season.
