Beginner trees for Japanese Maple Forest

My air-layers were not getting enough food. All the leaves on the layered trees were dying off. I felt that the time to act was ASAP! So I did.
I unwrapped my glad-wrap and undid the little packages of sphagnum moss and found some beauties. I've cut them off, planted in rich soil and have crossed my fingers.
My query is... how many leaves to I leave on now that I've cut off the layers?
