I agree that the upper portion of the trunk after the first bend is too long and straight.
Gavin's plan would work nicely for this tree, save all ramification and years of growth.
Root levels will take a few years to sort out but should be worth it in the end.
Consider.

Be careful wiring mume. Some seem to hate it. Clip and grow works best. Or tying branches down

Keeping the upright stance i thought of somethign like this
Thin out the top knob of branching, shorted the others and develop a nice rounded canopy.
Needs a back branch too
Maybe tiling slightly to the left and forward as well.

You now have 2 very good options. Ken's last virt is what I had imagined for this tree as an upright style.
The cascade suggested by Gavin also has great merit but will depend on the roots. You will need to scratch around near the base to see where the strong roots are.
