I'd be doing both, open up the carving AND grow the second trunk!

Without the second trunk it will just be a "good" tree, with the 2nd executed correctly I think it can be "great".

Just to throw my hat in the ring, the tree is coming along really well. I think the second trunk adds a lot of interest and in my opinion it would be a real shame to see it go!
