The first and last photos were taken on the same day, so if you compare them you'll get an idea how much foliage I removed. Looking at the pics, I'd guess I removed close to 75% of the foliage. I usually cut back to 2 or 3 leaves per branch (more if it is lower or weaker than other branches). I half expect that most of the leaves I left in place will wither and fall off as the new buds come through - I dunno why it happens that way, but it is what I have observed.

I think thats a good point about the post layering process that i have unintentionally overlooked. The introduction of a good growing mix/removal of spent sphagnum, I will definitely be considering this in future
