I know i’m not providing any stock, but at least maybe a couple of ideas for species that grow well in our climate to keep an eye on 
Have you thought about looking into Murrayas and Gardenias? Murrayas love our climate and are excellent as bonsai material. I have a couple of murrayas in training. One training to hopefully one day be a cascade, and the other a semi cascade. Still along way off though.
I was training a gardenia into a small cascade once as well, unfortunately it is no longer with us.
