Cottoneaster advice

Hi Guys
I got this cottoneaster at the start of the year from My mother in laws yard along with a number of small Ash. I chopped the two trunks right back and it died off to basicaly to a bare trunk. Over the last 3-4 weeks it has exploded to life and is shooting like crazy. I plan to leave it in the box for another 12-24 months to fatten up.
So my first question is: should I start pruning now to get ramification started, and if so, how many leaves should I leave per shoot?
My second question is: there are a number of shoots coming from the bottom of the trunk so should I chop back further down and select a new leader from there?
Any comments are more than welcome.
