Baby Olives, what to do with them?

I have these "baby" olives growing in an old fish pond. What would people use these for?

Some are about 10mm diameter, some are a little bit bigger...

Cut them back really hard to a rough shape and let them grow out again. Then rinse and repeat until you have something you want to work on.
A small tree will be the quickest to develop, so I think looking for the smallest possible tree in them.

Bonsai them mate! Olive are very hardy, and make great bonsai from what I've seen posted on this forum
