Recent dig

Hi All,
Just recently (two weeks ago) dug a deciduous tree out of the ground and placed the root ball in a large pot. Not sure what it is yet but it was about 4 meters tall and turned a beautiful red in autumn, not too fussed about that at the moment. What I have now is a stump about a 1.5 metres tall with new shoots sprouting along the side. There's not a lot of taper. I'm unsure of what to next. I only want the end tree to be about 1 metre high.
Suggestions welcome.
