When to prune a flowering plum?

Hello everyone!
I'm very new to bonsai. I've recently inherited three bonsai trees and, while I'm managing with the Melaleuca and Chinese Elm, I'm floundering a bit with the flowering plum.
It has very quickly gone from this: to this: I'll absolutely be looking into joining a local club to learn to basics, but in the meantime I can't seem to find a definitive answer as to when to start pruning back all this new growth?
I would really appreciate any tips or help you could offer me, thanks guys!
