Hello all!

I bought it as is a year ago with a white little flower. Autumn then came and it remained a stick for a very long time (top right).
These days its very tall and leafy! It occasionally flowers but not for long.
Is it a prunus? A cherry blossom? Rough memory the label on it said "Prunus" Double White ... Which means nothing to me on my searches.
Could someone identify this plant for me and with a picture of what it will/should look like .

It could be a Double White Flowering Peach. If you google it you should find what they look like.
I'm not really sure what it is you want to know. Many stone fruit/flowering trees are referred to as Prunus. Peach, Plums etc. Can you elaborate more?

The flowers look really delicate on it when it does flower versus what I've seen on google.

Naturally I've done quite a few searches on what it could be but nothing seems to make me think 'yep definitely that one'

Sirstiv, flowers can be different from one branch to another so that is no indication. Especially blossoms. A plum for instance can be a single, a double, a semi double. Light pink, darker pink, white, yellow white, but it is still a plum.
You may never find exactly the variety you have. That is why when unknown it is generalised under Prunus. It does look similar to a flowering peach I have which has long growth, narrow leaves, and white flowers very similar to your photo.

There is a similar plant at my parent's garden. It is over 40 years old, is never more than 60cm tall and blooms profusely every spring with beautiful little white flowers.
It grows like a clumping bamboo where thin straight new shoots just grows from the base.

I will take a photo next time I am there.
