Spanish Olive Tree What to do?

Hi All,
Here I am again asking for help... 2 years ago I purchase this Olive from a Bonsai Nursery... I let it grow freely for 1 year and now I've chopped it down and I'm planning to let it grow with some direction in mind... but the problem is I'm not sure what to do......
Could you please help???

The same as for the wisteria. Cut back to just above the stump but this time you can use wire to shape the new trunk/branches.
You can't do anything with the existing branches. If you leave them will end up either unhappy with the tree and dispose of it or cut it back in the future anyway. Unfortunately there's only one way with these and that's starting from scratch.
It's really very easy, you cut it, throw some osmocote on it and then basically forget about it for a year. Come back to it this time next year and I guarantee you will have something to work with.

You will get suckers from everywhere. Just keep 2 or 3 or 5 in good positions and bub off the rest every now and then.

An update on this one and some help please...
Mike... I now read and remembered your comment ... you said to leave 3 or 5 shoots but I forgot about it... what should I do ? Find the 5 to keep and cut all the rest? Which one should I keep and after I select them should I wire or let grow freely until correct thickness is reached?

Find the best placed shoots and remove others. Try to choose different thicknesses where possible and a good spread around the stump.
Wire those you have chosen. See Mike's thread about straight sections of trunk but you can see in his virt the wobbly trunks he has proposed.
Prune the remaining trunks so you'll get both taper and some side branches starting to form.
After that you can probably leave it to grow for another year (just remember to check the wires regularly and remove when they get tight)

And it is done, I went with 5... and yes I basically wasted a year... so back to the beginning now... hopefully I'll get it right one day...What do you think?
