I stumbled across a few instances of whatever this plant is while out digging for olives and hawthorn. There seemed to be a few around, and none were showing any signs of losing leaves so possibly an evergreen. I only took the one photo focusing on a single leaf - there are some fruit-looking things at the top of this photo that aren't in focus unfortunately.

Fingers crossed for something invasive and interesting so I can go back and dig some

The best match I can find so far is rhamnus alaternus, not confident but those leaf spines look pretty distinctive

Its a bit hard to identify off just one leaf. My plant finder app says it could be either a pear or black haw. Good luck with it

Cheers guys, the closest match I came up with is some sort of cherry which I don't reckon is right - both black haw and r. alaternus look closer in terms of leaf shape. Black haw seems to have opposite leaves which might rule that out.

If (when ) I go back out digging I'll grab some better photos.
