Hey I have this guys that looks proper sad but he’s got new leaves growing from the trunk, not the branches. Should I cut back the dead branches or leave it to grow for a while longer?

These new shoots are very delicate and can be damaged easily at this stage Leave the new shoots to grow and harden off before removing the dead branches.
Cheers

Hi Stefan. Welcome to Ausbonsai.
You should pop a location into your profile so others can make allowances for your climate when giving advice. What works in Cairns is not always good in Hobart or Toronto.

Too cold for me to grow willow leaf here but I believe they are more cold sensitive than many other figs. That may be why you have the dead branches.
I agree with Kirky about allowing those new shoots to develop and harden a bit more. Cutting the dead branches off now won't turn it into a bonsai. Only time and some skill will do that so no real point putting your new shoots at risk.
