Hey owieo86,
Your climate is different to Sydney and probably more to the liking of your PJ.
I have defoliated my figs a few weeks ago and they are responding well (to the point where it is almost time to go again)
In your climate i would assume the timeframe you have for defoliation would be far greater.
If the tree is in good health, give it a go. They are hardy buggers and will surely come back. The more times you try, the more times youll learn something about it and the tree. Each one of mine reacts slightly differently to defoliation.
Oh, the other thing, there is so much information on the Forum about PJ Figs, type your question into the search bar at the top. Probably a quicker way for you to get an answer aswell. Alternatively a couple of people have worked really hard on developing the wiki. That would also definitely assist.

As Dave has said long as your trees are healthy you should be fine doing it now. I started defoliating 5 weeks ago and my figs are coming back really well.
After you defoliate you tree do not fertilise straight away wait until you have leaves back on your tree.

toowoomba is a maple, cedar, pine kind of city, quite chilly. Sometimes i wish i lived there so i could grow alot of the cold climate species as bonsai.
Anyway on topic now should be fine, things are really warming up all over so i say go for it. I'm thinking of hacking at a fig today myself, good luck

Hey thanks guys. Night time temps this week have pretty well been over the 15 degree mark. By 9am this morning it was 33. Also I fertilized yesterday would this be a problem?
