Iv.e noticed some seed pods on the' white' wisteria--just wondering if the resulting plant will likely be true to parent or revert to another colour

Depends whether another wisteria was in flower at the time and bees transferred pollen to it. Chances are it was self pollinated and will be true to form. However if it is not it will take many years to flower from seedling and this is how new cultivars are formed.
