Cool? top of 31 and low of 20. That sounds like Ficus heaven to me.
It's been very cool because it feels like the humidity has just dropped because I spend at least 2 hours under the sun out in my garden and don't break a single sweat

How long should I let the cuttings grow before I do any work on them such as cutting back and wiring

Why do you want to cut and wire your cuttings? Better wait for them to be transplanted and established. You will just stress them now.
I ask lots of questions that sound like suggestions. Please remember I am a inquisitive newbie trying to figure out why You made a particular decision, in order to learn.
