Pepper tree/Apiesdoring??/Olive tree: For the last time!

We moved in December from Johannesburg to Cape Town, a summer rainfall area to a winter rainfall area, as stated in my previous post. For the last time: Advice on pruning and position:

Pepper tree:

I air layered a branch of this pepper tree. Someone mentioned that it could be a Brazilian pepper tree.

Olive tree

My wife bought the olive tree at a flea market two years ago. The trunk is still quite thin, but I have tied a "tie-back" at the level of the soil- this apparently encourages the trunk to develop.

How does a tie back work? And what's the process? And most importantly has anyone had good results from doing this?

The way they do it in Japan is to tie the trunk, and that creates swelling, but after that you will need to ground layer at the widest point.
