Would like to which of these two species require more sun?

Both trees probably need more cold than what you will get in north sydney,

Of the 2 i would say you will probably have more success with the white pine but neither will take to full sun like a jbp. I would say part sun/shade and regular misting for the scots in summer, full sun in winter
