Would I need to wait until the crack has healed a bit to remove the wire?

You will need to support this until the new wood is strong enough to support the top. That might take a few months or might take several years. Wisteria are notorious for slow healing of wounds so I assume it will be the same for healing a cracked trunk.
Maybe it is not worth trying to heal this one. The trunk looks very long and thin to be a good bonsai. May be better to cut it off and grow a new head from shoots that will grow on the trunk??? that would give you a shorter tree without the problem of a weak spot. Wisteria should shoot ok from bare wood.

There is a bud below the damage in the trunk. But I'm not sure if it will grow or not. It doesn't look like it is growing. I would like to cut it back and make a smaller one. It's having a really good growth period so if I were to cut it back would I need to do it soon?

Wisteria rarely back bud while there is growing tips above. I had to cut all my large wisteria back to bare wood before it would back bud. They are very hardy survivors and will almost certainly pop out new buds from the trunk if you cut it off. If the trunk has snapped that will interrupt the flow of sap so some buds may grow below the break but I have found them very reluctant to bud while the top is still growing.
You can cut wisteria any time. Now, when it is active is a good time but you can also prune these when dormant in winter.

Wisteria cuttings strike well in most cases. Reduce the amount of leaves, dip the base in rooting stuff if you have some then put it in and

A day after I cut the trunk yesterday it has started to produce a lot of sap out of the cut. I Tryed to put the steri-prune on it but it's pushing the steri-prune off with the sap and making a bubble on the cut. Is there anything I can do? To stop it weeping

I have not had this happen with wisteria but it is common when pruning maples in spring.
2 things to try:
1. ignore it and
. This is sometimes effective strategy but occasionally the bleeding continues and plant does not recover
.
2. Root prune. I find that cutting the roots stops excess bleeding pretty much immediately and should not harm the plant now that it has no leaves. Don't need to take too much off, maybe 1/3 will do the trick.

I don't know how much of a root system it has. I remember from when I got it a year ago it was rather a good looking ball. But it wasn't overly big. I think I might have to have a look at the roots tomorrow maybe. It doesn't seem to have produced any sap since yesterday.

I did root prune it. It needed to have it done it was pot bound. I did take about 1/3 of the roots. Off and it was hard to put it back in as there are 2 big roots coming out of one side at 2 different angles so it makes it hard to postiton it right in the middle. How long before we know if this works?
