Shoots don't normally sprout where you want them to but i think privet is an exception. I would let it grow now for a year and then you should have lots of branching to choose from. Water and feed it though.

I agree with Bodhi. No point in planning what style or shape to make before you have any idea whether the tree will survive, let alone grow branches where you want them. I understand that you are excited but you really need to leave this one alone until it gets going. You can wire shoots into position if you get any in the correct places but I'd be leaving all new shoots to grow for a year to make sure that plenty of roots get growing and the tree recovers strength enough to take you next round of insults. Pushing trees too fast and hard can kill them. Good bonsai takes time.
