I know you can work these that soon, what I'm saying is you want to build it up to produce a lot of branching... As much as you can get it pushing do it. I collected a plum I have now passed along. I got told I could work it 3 months after digging. It had a few branches and going strong. I was able to get it budding off the trunk and when I passed it on it had so many branches forming the persons original idea was put aside to asses the new possibilities.
In this case you have trees that grow strong, shoot like mad and respond fast to collecting. This gives you a chance to wait the same three years as you would other plants but build the foundations of its styling.
From collecting you have a trunk, next its the branches... the more the better to start with.
