List of trees for Carving

Good morning all, I have a request, :D for all those people that do a lot of tree carving, is it possible for some people to put up a list of all the tree species that will take some carving work, maybe listed under Deciduous and Evergreen, and maybe also the best times to carve, would much appreciate it, thanks.

Hardwood evergreens. there are very few deciduous that sense being carved.
Young and hostile but not stupid.

Hi all, so carving works on evergreen trees would be better over winter or in spring? I have an Olive I want to get stuck into!

And a few deciduous trees I could start on. My theory being that less stress would be put on the trees through winter dormancy? And being carving work, Im not actually trying to achieve any callus over the wounds.
