in reguards to the roots on this large fig would it be more in my interest to keep as much as possible or would it be ok to cut it down? i was thinking or removing the roots below the red line and the branch above it?

yes mate, I would be cutting those roots back to that line aswell. it wont hurt to cut the top either. they are pretty tough trees! and will respond well, especially getting it into some good medium and some care. seasol etc.
