Looks like an olive to me as well. Pomegranate leaves are a bit longer, slightly different colour and not so leathery.
The smaller seedling could be a trident maple but not certain - can't see it clear enough.

Yeah the ficus Benjamina have exploded after the trunk chop and root prune. I was very nervous at first because everyone told me the struggle to back bud on older wood. But all three have really exploded with growth from everywhere. I've already done initial styling and branch selections

The Figs look great, well done.
They root well from cuttings too, if you wanted more plants when you decide to prune and shape the big ones.
The F. benjamina in my avatar was grown from cuttings, it's about 3 metres tall now and i noticed when photographing for my avatar, it too has decided to send out new shoots from the top of the pot all the way up.
