Bonsai World at Jilliby on the central coast is a great place for stock trees and some potted Bonsai. You could also check out Bonsai-en in Medowie. Another good option is to join a local club. The Newcastle Bonsai club has some great experienced members who are very friendly. There will often be trees for sale from club members at meetings for very affordable prices. Also keep an eye out for Bonsai shows. Usually there is a vendor or 2 at them as well as a club sales table. Great places to get trees.

General nurseries often have suitable material but I have found the roots are often a tangled mess so won't make good tress without a few years of corrective work, if ever. Avoid trees from Bunnings. Often overpriced young plants that are on the brink of death.
